Baking Soda or Sodium Bicarbonate is extensively used in food industry. It is also used to adjust pH in brewing water.
PRODUCT INFO
Sodium Bicarbonate increases pH. This is helpful in hoppy and dark beer to decrease bitterness.
However it should be used in moderation since a pH spike in wort can make yeast go dormant and increase risk of conamination.
Due to sodium ion it can also help introduce saltyness in beer and percieved increase in malt character.
