Amylase Enzyme Mix - Ferment (Almost) Anything
Alephont's Amylase Enzyme Mix can convert all grains, fruits and many other things to alcohol.
No yeast required, if target abv is under 8%.
ABV: Upto 16%
Operational Temperature: 28°C to 36°C
Ideal Temperature: 32°C
Using Alephont's Amylase Enzyme Mix you can convert arguably any starch of your choice into alcohol.
Examples include but are not limited to:
- Unmalted Cereals: Wheat, Barley, Rice, Corn, Oats, Sorghum, Millets, Lantil etc
- Vegetables and Fruits: Potatoes, Sweet Potatoes, Banana, Pumpkin, Yams, Squashes, Peas etc
- Household Items: Bleach-free tissues and toilet paper, Coconut husk, Rice husk, dried grass, organic wood shavings etc
HOW TO USE:
A) For fermentation of cooked grain
(Bellow recipes are cereal grains based)
Batch size: 20 Liter
Fermentibles: 5kg to 7kg of rice, corn or other grain
Amylase Mix: 30g to 42g of-----------------------------------------------------------------------------------------------
1. Solid fermentation of cooked grains:
1) Soak the grain for a few hours(4-8 hours ideally) until they absorb water and plump up. Steam grain for 15 minutes, then take the grain out of steamer, cool to 24-28℃.
2) Dissolve 30g to 42g of Amylase Mix into 300ml to 350ml of 32-35℃warm water, soak for 10 minutes and reduce the temperature to 28-30℃, and then evenly douse it on the grain mash.
3) Evenly mix and transfer them into a 24-30℃ fermenter and let it ferment.
4) At fermentation temperature range of 28-36℃ fermentation time is 4-12 days.

2. For liquid fermentation of cooked grain:1) Soak the cooked grain in 4 times as much water.
2) Add Amylase Mix in the 30-32℃ water.
3) Mix for 10 minutes then seal.
4) Ferment for 4-8 days.

B) For fermentation of un-cooked grains:Recipe:
Fermentibles: 5kg to 7kg of rice, corn or other grain
Amylase Mix: 30g to 42g
Water: 15L to 21L of hot waterMethod:
1) Mill the grain (ideally to use small course pieces), and mix the dry grain with 15L to 21L of hot water.
2) Add 30g to 42g of Amylase Mix after the temperature cools down to 32℃ and mix thoroughly.
3) Seal and ferment for 8-15 days.
4) Mix twice every day for the first three days (ideal temperature is between 28-36℃).
5) Optimal fermentation temperature is about 32℃. Fermentation temperature shall be kept under 38℃. Take the heat insulation measure when the temperature dips below 26℃.
Specific Instructions for un-cooked and un-steamed Fermentation:
1. Granular grain and broken rice can be used to directly ferment, but the fermentation cycle should be prolonged accordingly.
2. Fermentation time is related to grain type, grain form(broken or whole), temperature and if distiller's yeast are used (in which case upto 20% faster fermentation). The fermentation time of un-cooked material will be shorter when material is smaller or broken. Using Distiller's yeast is recommended contrarily to shorthen fermentation time.
3. (If adding) Distiller's yeast to fermentibles weight ratio is 5g yeast per Kg of grains.SHIPPING INFO
